My favorite recipes are those that I can make using ingredients that I always have on-hand. Agreed? With a newborn on my hip quick and easy recipes are a MUST! This tuna bacon cakes recipe meets that requirement with prep taking about 10 minutes and cook time 4 – 5 minutes. That’s hard to beat! It gets even better, my hubby thinks they’re delicious (and he’s picky)! Let’s just say when he ate them there were a lot of MMMMM’s. It makes me so happy when he enjoys the dinners I prepare. My goal when he comes home is to erase the stress from his long day – a clean/warm home, hugs and kisses, laughter and delicious food usually do the trick.
-3 cans of albacore white tuna (12 ounce), drained
-1 large sweet potato, mashed
-6 slices of cooked bacon, diced
-5 chopped green onions
-4 tablespoons of fresh, chopped cilantro
-3 garlic cloves, minced
-Zest from 1 lemon
-Salt and pepper to taste
Mix everything in a bowl except the flour and oil. Form mixture into medium sized patties. In a large non-stick skillet over medium-high heat coat pan with coconut oil. Lightly dredge the patties in flour before placing into skillet. Cook patties on both sides until golden brown.
This recipe will make 14 – 16 medium sized patties, depending on the size of your family is enough for 2 – 3 meals. I cook 6 at a time, my husband and I enjoy three each and I save the rest for another evening. I usually make a citrus salad or sliced avocado to compliment the patties.
